Bruschetta
1 loaf Italian bread 4 Roma tomatoes 1/2 cup black olives, sliced 1 Tbsp. fresh basil, chopped 1/4 cup fresh parsley, chopped 1/4 cup olive oil 1/4 cup Feta cheese, crumbled Salt and pepper to taste
Slice Italian bread lengthwise and place in broiler to brown on top (watch closely so it doesn't burn). Combine remaining ingredients in a bowl and mix well. Remove bread from oven and spread tomato mixture over top. Return bread to oven (at 350F) for several minutes to warm topping and allow cheese to melt. Slice and serve.
Do small slices for appetizer or larger ones to serve with the meal. Italian bread works best as it is wider than French bread. However you could experiment with different types of bread to see which you prefer. We like it made with sourdough too.
